Brindle Café

Brindle is a chef-owned café, bakery, and catering company in downtown St. Catharines. Rooted in seasonal Niagara ingredients, handmade food, and warm hospitality, Brindle brings fine-dining technique to a neighbourhood café, serving house-made pastries, sandwiches, specialty coffee, and thoughtfully prepared lunches.

Owners Nicole Douglas and Carlos De Veyra bring decades of experience from some of Canada’s top kitchens. Nicole’s pastry background, Italian heritage, and love of Niagara farms shape her nostalgic desserts and baking, while Carlos draws on his fine-dining experience and multicultural upbringing to create bold, seasonal savoury dishes. Together, they champion local producers, quality ingredients, and the joy of gathering over great food.
